What comes next is Shay Ristorante, an 89-seat restaurant opening October 1 at a landmark Rosedale corner that has seen several concepts come and go over the years.
Friedlich is hoping a more personal approach will change that. Named after his daughter, Shay reflects his own vision, with everything from the concept to the name carrying a distinctly personal touch.
Shay is built around a simple idea: every guest should feel like they’re sitting at Friedlich’s own table. The restaurant’s menu focuses on fresh handmade pasta made daily, seasonal ingredients, and Sicilian olive oil served alongside house-made focaccia as guests’ first taste of the experience. A dedicated sommelier also oversees the wine program, ensuring thoughtful pairings throughout the dining experience.

Shay is open Monday through Saturday from 5 p.m. to 10 p.m., remaining closed on Sundays. The restaurant offers private dining options for larger gatherings while maintaining a dinner-focused experience centred on Friedlich’s personal vision.
Reservations can be made online. With its prominent Rosedale location carrying a long history of restaurant turnover, many will be watching to see whether Shay becomes the neighbourhood’s next lasting fixture.
