Jason Bangerter runs the kitchen here, and he takes his ingredients seriously. The estate has its own working gardens, with vegetables, herbs, and edible flowers, and he has spent years building relationships with local farmers and foragers who share his commitment to doing things properly.

What ends up on your plate is classical French technique applied to whatever is growing, grazing, or being foraged within a short drive of the property. It sounds simple. It is anything but.
