The smart move at a ribfest is not to order everything from the first vendor. Pace yourself, share plates, and hit five different rib joints across the afternoon. By the time you leave Vaughan Ribfest, you have tasted properly smoked ribs from North America’s best teams, eaten pulled pork that made you reconsider everything you thought you knew about pork, and discovered which sauce style actually works for you. Four days is barely enough time.
This is the fourth year Vaughan Ribfest takes over Assembly Park for the Victoria Day long weekend. The festival brings five of the continent’s top rib teams to set up competition-style service. These are teams that have won awards. Teams that take seriously the science of smoke, timing, and meat selection. They serve slow-smoked ribs, tender brisket, pulled pork that falls apart when you look at it, BBQ chicken, smoked sausage, and those massive beef dino ribs that are the size of your head.

Beyond the meat, there are festival foods like loaded poutines, bloomin’ onions, roasted corn, and beer on tap. The vibe is a relaxed family gathering mixed with serious food appreciation.
It Is More Than Just Ribs
If you are showing up only for the ribs, you will have a good time. But Vaughan Ribfest has enough other stuff happening that four days become a full weekend. Live music plays all weekend long, with tribute bands and local acts.
There is a rib-eating contest on Sunday afternoon, which becomes increasingly entertaining as time goes on. Sunday also includes fireworks over Assembly Park. The midway runs the entire weekend with rides and carnival games for people who need to move between eating cycles. Parking is free. Children under ten get in free.
Sunday Is The Day To Go
If you can only make one day, Sunday is the full experience. That is the day with the rib-eating contest, the fireworks show, and maximum energy. But honestly, each day has a purpose. Saturday has welcoming ceremonies and is the day to arrive early and get your bearings. Monday is the best ribs award and wraps everything up.
The whole point is that you can plan your visit based on what matters to you. If you want the full festival vibe, do Sunday. If you want to eat undisturbed, maybe Thursday matters less.
