The world’s largest one-day maple syrup festival is returning this spring to a charming small town in Ontario, and it’s the ultimate excuse to escape the city for a sugar-filled Saturday.
For over 60 years, the Elmira Maple Syrup Festival has served as a sweet rite of passage, signaling that winter is finally melting away. What started in 1965 with a hopeful batch of pancakes has transformed into a Guinness World Record-holding tradition that draws tens of thousands of visitors to Elmira.

The star of the show is, unsurprisingly, the massive pancake breakfast. On April 11, the town will come alive as thousands of fluffy pancakes are flipped and doused in fresh, local golden syrup. Beyond the breakfast plates, the entire downtown core transforms into an expansive outdoor mall with over 100 vendors offering everything from handmade crafts to maple-infused treats like taffy on snow and festival cones.
For those looking for a bit of nostalgia, you can ditch the car and arrive in style. The Waterloo Central Railway operates a heritage train that chugs through the scenic countryside, transporting guests from the St. Jacobs Farmers’ Market directly into the heart of the festivities.
