Raised just minutes from where Chef Miles‘s new restaurant now stands, he trained at Stratford Chefs School before honing his craft at Langdon Hall, Eigensinn Farm, and Michelin-starred kitchens in Napa Valley and Spain. He also worked at restaurants in Montreal and China. Inspired by the growing culinary spotlight in Elora, he returned to open his most personal venture yet.
Foxy’s Tapas, Cocktails and Bodega is set inside the historic Ayrshire Hotel, home to Canada’s oldest standing flatiron building. It is a striking landmark that gives downtown Elora an unmistakably European feel.
Rather than recreating traditional Spanish tapas, Chef Miles Pundsack Poe draws on his years cooking in Spain while showcasing the best of Southwestern Ontario. He pairs seasonal local produce, meats, and foraged ingredients with imported Spanish conservas. The result is a menu that reflects both the region he returned to and the country that shaped his cooking.

The menu is built for sharing, with dishes that blend Spanish inspiration and Ontario ingredients. Highlights include uni toast with kelp oil and citrus, jamón croquettes topped with Manchego, sea bass crudo with local begonia flowers and Valencian orange, and aged grass-fed chuleta served with romesco. The flamed octopus pairs ajo blanco, ajo negro, and chickpea sofrito in a balanced, flavour-packed dish, while desserts feature Ontario fruit in Basque cake and a pan con chocolate finished with olive oil.
Foxy’s arrives as Elora continues to establish itself as one of Ontario’s most exciting culinary destinations, with acclaimed chefs choosing the village for both pop-ups and permanent restaurants. While the opening adds to that momentum, Chef Miles Pundsack Poe’s return to his hometown gives the restaurant a story of its own.
